Pumpkin Parsley Smoothie with Homemade Pumpkin Purée

Pumpkins are in season and my favorite ways to eat these vitamin, mineral and antioxidant rich vegetables are in my Pumpkin Parsley Smoothie with homemade pumpkin purée. I pair the fresh pumpkin with Italian parsley as it’s loaded with antioxidants, Vitamin A and is a great liver detoxifier!

Ingredients:

  • Almond or Coconut Milk

  • 1 Banana

  • 1 Cup Homemade Pumpkin Purée (Recipe Below)

  • Small Handful Fresh Italian Parsley

  • Cinnamon, to taste

  • Dash of Clove

  • 2T Hemp Seeds

  • Fresh Vanilla Bean, to taste

Directions:

Blend ingredients together. Enjoy!

Pumpkin Purée:

Cut a small to medium sized pumpkin in half, scrape out the insides (save the seeds for toasting!), and place meat side down on baking sheet. Bake at 350 degrees for 1.5 hours or until a fork comes out clean. Let cool and scoop out ‘meat’ to get your pureé.
